I've been very into tapas recently (especially Cesar in the gourmet ghetto of CDR's fav city). Any ideas for pairing? I've been doing pinot, because most dishes are rather light, but what do you usually have with kalamata olives and spanish cheeses?

I make a salad and Manchgo cheese is in it. I like pairing it with Rodney Strong Charlottes Home Sauvignon Blanc.

Any Tempranillo or Garnacha works well (Typically the label will say Rioja as mentioned before). Sometimes the label will mention the grape varietal. One further recommendation is Verdejo, notably pairing well with a tapas with chorizo sausage. A tapas bar commended me for this recommendation for their list.
