Just enough sweetness to play nicely with the pastry. Plenty of bubbles to clear the palate.
I adore the 2006 Taittinger Comtes.
However, I would still opt for something a little sweeter here. While I appreciate this is a less-sweet version, assuming it is still some sort of Napoleon cake / mille-feuille, I think a Demi-sec Vouvray would be my selection. I'm a sucker for Huet and I tend to gravitate towards the Clos du Bourg.

friend of mine also suggested Quarts de Chaume but I thought it might be a bit too sweet for Napoleon?
