I tried some really steely, crisp whites from Portugal recently. I'm afraid I can't remember the names of all the indigenous grapes used in those blends, though. I always think of Portugal when I think of Sardines, somehow. Then again I also think of Sardinia, like in that goofy Monty Python hide and go seek skit...
I love sardines. I agree on the crisp white. Not fruity..stay away from Sauv. Blanc. Try a bottle of Corvo from Sicily. It's about $9 or $10 I guess. Not the greatest wine in the world, but goes with the sardines.
