Like the duck fat suggestion . . . for me, will work with plain old russet or sweet potato. Delish

Red Face Seems to be a great potato chip would not need any dip to go with it.

Even though I voted tater tots, I would say there is no best one all the time. Sometimes I want tater tots, sometimes I want fries, sometimes I want waffle fries, sometimes chips hit the spot, whatever. But, in general, if a sandwich/burger comes with chips, I will "upgrade" to fries, and if tater tots are an option, I will take those.

Onion Rings

1 cup buttermilk
2 cups flour
1 Tbs. salt
2 tsp. paprika
1/4 tsp. cayenne pepper (or more to taste)

Oil for frying (I like peanut but canola works)

Slice onions. One easy way to get really even slices is to halve the onions before slicing. You don't get "rings" per se, but it's much easier unless you're really good with a knife.

Dump onions into buttermilk in a bowl and cover. Refrigerate for an hour.

Mix flour and spices in a large bowl.

Heat oil to 350ish in a heavy pot. No cooler than 350 and probably not hotter than 375??. 3" deep is good.

Drain onions from buttermilk and toss thoroughly in flour mixture, coating well.

When oil is hot, shake excess flour from a small portion of rings and fry for 2 minutes or so. I use a wooden chopstick to gently separate the rings if needed. Don't fuss with them too much, especially early in the fry. Do NOT overcrowd.

Drain well on paper towel or cooling rack with towels underneath. Salt & Pepper. Eat them as soon as they cool enough to not hurt you. Enjoy.

I parboil mini white potatoes, cut them in half, toss them with olive oil and sea salt, and throw them on the BBQ on an aluminum grilling tray for 15 minutes at 450° or so, turning them a few times. They're beautifully crispy on the outside and creamy on the inside.

+1 on the French fries if well done, if in restaurant/diner...

At the cottage though - low salt rippled potato chips and a Weiss beer with a wedge of lemon in it wins. Fast, tasty, and the texture of the chips complements the burger nicely.

Good potato salad or vinaigrette coleslaw are also high on the list in summer.
