Tuesday I stopped in at Marie Callender's to pick up a pie (they put their whole pies on sale for $7.99 every February, June and October) and they had a breakfast I just had to try. Scrambled eggs and pico de gallo enclaladas with a side of hash browns. It was very good, but I suggested they add chorizo to the scrambled eggs and Mexican rice instead of potatoes as the side. I think they're taking it under consideration because the manager looked very interested. I will, of course, make them for myself that way as part of a Sunday Brunch.

This morning however, I am making a three egg omelette with chorizo, chili bean and sharp cheddar filling garnished with slasa and sour cream; a side of Mexican (NOT SPANISH!) rice; and buttered Mission Artisan whole grain tortillas.
I had to fast overnight for a blood test this morning, so afterwards I stopped in at Marie Callender's for breakfast again and another pie (peach this time). Would you believe they are now serving scrambled egg and chorizo enchilandas with brown rice? It was almost better than my own! They also treated me to a few slices of banana blueberry bread while I waited. I washed it all down with copius amounts of coffee.
