Wine Spectator rated the 2011 Champagne vintage a lowly 79 points and wrote: "Approach cautiously; very few houses declared a vintage due to heterogenous fruit at harvest". I've never heard this term used for wine.

One source I found wrote "the ingredients in wine all combine very nicely to form the substance we know as wine today. This combination of ingredients (grape juice concentrate, calcium carbonate, sulfur dioxide and others) is the perfect example of a homogeneous compound."

So is Wine Spectator saying that the compounds that make up wine in Champagne in 2011 are separating from each other?

Explain please.
