I do alot of beer trading, #33 top traders on Ratebeer.com, with about 130ish beer trades...its a bad addiction! Big Grin I like to taste stuff that I can't get my hands on around here, even got another Isabelle coming.

Barley John's - Old 8 Porter (one of the best Porters I've had)
Barley John's - Smoked Old 8 Porter
Barley John's - Wild Brunette (a red ale brewed with wild rice) (one of the best beers I've had)
Barley John's - Rosie's Ale (Wild Brunette, triple fermented, then aged in used Bourbon barrels) ... this sucker clocks in at 18% abv.
Barley John's - IPA (one of the best IPA's I've had)

Bell's - Two Hearted Ale (IPA)
Summit - IPA
Goose Island - IPA ...... yes, I do like me some IPA
Red Hook - IPA

Summit - Winter Ale
Summit - ESB
Summit - Extra Pale Ale

Stone - Oaked Arrogant Bastard

New Belgium - "Le Fleur, Misseur" -- omfg!! I love this beer!!! Reminded me a lot of Duvel Green

Bear Republic - Racer 5 IPA -- still one of my favorite IPA's
Firestone - Pale Ale
Sierra Nevada - Pale Ale
Lagunitas - Maximus IPA

Cantillon - 2006 "Lou Pepe" Gueuze ... extremely rare bottling from this heralded producer. Compared to other high-quality gueuzes, this wasn't worth the $30 tariff ... that said, it is inherently worth the $30, imo.
Eel River - Climax Noel Imperial Red Ale
Anchor - Our Special Ale 2009
Brouwerij - Corsendonk Christmas Ale
Great Lakes Brewing - Christmas Ale
Brouwerij - Petrus Winterbier (this was awful)
Ridgeway Brewing - Criminally Bad Elf
Three Floyds - Alpha Klaus Xmas Porter
Brouwerij - St. Bernardus Christmas Ale

All of the above were generally excellent with the exception of the Petrus Winterbier.

wow ... this is quite the surprise (which I suppose it was for you, too). I'm generally impressed with Petrus' bottlings ... now I know not to try this one. Their oak-aged brown ale is fantastic ("Oud Bruin" ... or something like that ... good stuff!).
Had the Sierra Nevada trifecta last night.

1. Pale Ale
2. Torpedo
3. Celebration

Wow, these are all good stuff. The regular has always been a go-to beer for me. The Torpedo just steps up the hoppy intensity and the Celebration is a great new find. I am not sure if that is new this year or just this holiday season is the first that I have seen it, but it is crisp, seems lighter but is very much a pale ale in the Sierra Nevada style and is one of my favorite "new beers" that I have discovered in a while.

Dogfish Head is one of the best breweries in the States ... but the BEST?!? - i dunno ... I'd feel awfully compelled to go with Port Brewing, Bell's, or Stone. I would gladly throw Barley John's in there as well, but they don't distribute so they don't count.

Bell's has a rather diverse selection. Each November they release approx. 10 stouts ... if you're a stout man, you might be a Bell's man! I also think their Amber Ale is one of the best I've had, and their Two-Hearted Ale (IPA) might be better than Dogfish's 60 min.. Bell's also has an awesome Sparkling Ale, and their Oberon is the best domestic Hefe I've yet to taste (but still not as good as Paulaner). Bottom line: Bell's is good shit!

Need some help from my fellow booze makers.

I'm making my own brew, but I want it to have a bit more residual sugar, but all of the sugar I throw in there, the yeast are voracious in gobbling it up. I just get more fizz and not sweetness. What to do?

I'm up to the secondary fermentation portion where I'm chapitalizing in the bottle like them champers
