If I had to pick, I would choose Westvleteren Extra 8, but like you said, it depends on a number of things.

IB, a very hard beer to find in the States. If you can find/buy this beer or the Westvleteren 12, buy without question. Since the bottles do not have labels, look for the color of the cap. ( blue & yellow)

Steve-It does have a maple syrup element as it is aged in bourbon barrels and barrels that held maple syrup...sadly no bacon...
