When you say central Italy, do you mean Tuscany - Chianti, Montalcino, and Montepulciano?

Check out osteria di passagnano for dinner in Tuscany. Stay at Fonte di Medici about 20 miles south of Florence. It is owned by Antinori and is close to the above restaurant

I would completely agree with the suggestion to stay at Fonte de Medici if you are going to Tuscany but I can't say the same about going to the Osteria do Passignano. Too expensive, stuffy and you don 't want to be limited to their in-house wine list. Try Scuderia across the road from the Osteria in Passignano - or better yet, go to Enoteca Fuoripiazza in Greve. You will have a much better experience.
While I agree Osteria di Passignano can be expensive, it's well worth it. I never found the place stuffy and I'm certain they carry other labels besides their own.
There's so many good restaurants it's hard to know where to begin. I enjoyed a good bistecca at Bottega del Moro in Greve.
