Truffle pairing question

What Italian wine would you folks suggest pairing with fresh ravioli (spinach/ricotta filling) with brown butter and sage sauce topped by fresh truffles? Thanks in advance. This one one of the items to be prepared during a group cooking class at the villa we are staying at in Florence in October.

Unless you're thinking he's staying in a "villa" in Florence, MS or Florence, SD, I think the $65 price tag shouldn't be too worrisome.......

Just kidding.  Sounds like it will be an awesome time!

Oh, and my advice is skip the vino and go with Rose champagne for what sounds like a divine dish.......

I would not serve a red wine here.

Top Arneis

many Friulian white and white/orange wines — maybe not Ribolla heavy, though

Miani (any), Damijan (particularly the Kaplja), Giacosa Roero Arneis, Paolo Bea Arboreas, either Coenobium are some specific suggestions. 

 

Champagne, white Hermitage, and Austrian Riesling would all be very fine non-Italian options.
