2007 Vincent Dauvissat (René & Vincent) Chablis - France, Burgundy, Chablis (8/24/2009)
Oh boy ! This was pure rock juice ! Incredibly mineral : flinty and chalky. Started with some pineapple on the palate to evolve to lemon notes with the slightest butter note on back palate. Nervy acidity but balanced. Finish is a little short.
Austere, this is an outstanding Chablis showing the piercing 2007 acidity and will not please everyone for sure. (91 pts.)
