Tonight, to accompany a nice red Burgundy

- heirloom tomato salad, 11 different varieties of tomato from the farmers' market, with a bit of chevre, green onion, and lots of with chiffonade of very fresh basil scattered over it, and a simple balsamic vinegar, dijon, and EVOO dressing; man, I LOVE this time of year when there's lots of great tomatoes available!

- roasted chicken breasts with fresh sage under the skin, roasted baby new potatoes, steamed green beans
Went to Diana's in Scarborough today only discover that Colville Bays are back in town. Seafood feast tonight with the Mrs. and little guy.

Colville Bay and Raspberry Point Oysters to start. Washed down with a Beau's Bitter Pils.

Grilled fresh calamari, scallops and wild caught chinook salmon, with fresh pea sprouts, grilled peppers, zucchini and artichokes. Roasted fingerling potatoes to round it out. Paired with a 2013 Mirabel Rose.

Feeling very satisfied.
At g-man's last night:
- smoked pork belly (very good, needed a couple more hours(
- smoked pulled pork sandwiches, banh mi-style (excellent)
- smoked chicken thighs (surprisingly tender and juicy)

Ate with kimchi and other assorted pickled vegetables followed by stove top peach cobler and coconut cake.

Drank with a 2011 Chassagne-Montrachet (forget the producer), 2008 Cayuse Cailloux Syrah, 1988 Haut Brion, and 2005 Robert Sinskey Marcien.
Got 27 sockeyes for 60 bucks and 2 cold cans of Colt 45... The "catch" was that they were uncleaned. After a full afternoon of labor I ended up with 11 females so last night for dinner the roe was crusted then fried in ghee and peanut oil. They were served with lemon and lime wedges, quinoa, fresh and steamed garden veggies and an apple blackberry cobbler. An excellent treat!

As for the salmon they are now at my friend's smokehouse plant.

Aaaand...? How was it? The Chard, I mean. I'm confident the perch was lovely.

Really nice. Not Chassagne-Montrachet nice, but would certainly hold its own against a top Village. Hints of lime, pear and grapefruit with a chalky minerality and medium + finish. At 6 years of age, the 20% new oak is well-integrated and this is ready to go. Thanks again to Danyull and winetarelli for putting this on my radar.
