My wife loves this one:
4 gloves of fresh garlic - diced/minced
1/4 cup diced red pepper
1/4 cup diced red onion
Coat bottom of pan with Garlic Olive Oil and cook above ingredients until garlic is browned
Add 1 cup chicken stock, 3 tablespoons sweet chilli sauce, 2 teaspoons fish sauce, fresh cilanto, red pepper flakes to taste, mix and reduced to 2/3 thirds
Remove from heat and add 1 tablespoon creamy peanut butter and 1/4 cup lime juice
Use a hot sauce for fresh grilled chicken or use a marinade (once cooled) for shrimp or scallops
(I use a brush during cooking the shrimp or scallops to continue to aid the remainder of the marinade to the cooking item)
