What kind of wines would go best? I am still not sure on side dishes but for sure I am doing salmon with Hollandaise sauce and a salad with some type of vinegarette dressing. ??? Thanks guys!

I would have said Pinot Noir til you mentioned the vinaigrette. Skip the salad with vinaigrette and choose something else- either that or serve the salad as a separate course sans wine.
A lighter Oregon Pinot Noir is an excellent match for the salmon. But, I agree with Board-O, not so good with the salad.
Do what we do, serve the salad first with a dry sparkling wine or New Zealand Sauvignon Blanc. Then the fish and PN - best of both worlds. Enjoy!

May I suggest getting center cut, fresh, wild salmon (copper river) and using a simple olive oil/basil/lemon sauce and save the hollandaise for some steamed asparagus?
