I just had some incredible saffron rice. Wow, if this were not so expensive I could have it every day. What are some foods that work well with Saffron?

I use a pinch of saffron in spaghetti carbonara sometimes. It gives it a nice earthiness and enrichens the color.

Nearly everything.
Rice, risottos, seafood and whit meat fish, veal, dishes with (cooked) tomato based sauces...
Paella
I live in Madrid and took a cooking class in Andalucia earlier this year. The chef said that saffron should be a bit moist, not dry, when you rub it between your fingers.
Green tea, cinnamon, cardamom & saffron - superb, just having a cup now
