i wonder what traditional knifemaker is called "the best" in japan.

i have a Kobayashi yanagi. (quite expensiv but not grindet to perfection)

we can order mizuno-tanrenio, watanabe, aoki....

WHAT KNIFE - "MAKERS", KNIFES ARE USED FROM THE BEST SUSHI-MAKERS?

IS THERE A ABSOLUT VERY BEST?

it is difficult to get real help, most people do not care about, or are not interested.

i do not have any connections to japan and do not read the language, so japanese infos are hard to get. i do forge my own knifes, but there not like those masterpieces Wink

My aunt is from Okinawa (huge Wine Kamikaze fan by the way)and most of her family still lives there.
I will ask her if she knows of or if anyone in her family can reccomend some good Sushi knives and then post it here.

I spoke with my aunt on Christmas Eve and she had no idea. She knew that Sushi knives have to be "wicked sharp and they are wicked expensive". I tried.
