anybody have any recommended pork purveyors for some primal cuts?
ie, quarter of a hog kind of deal?

All girl crew at the pig farm which I thought worked well with my all girl winery crew.

they'll get it dressed and in what ever shape you want. I'm after a ham too. It's in Sonoma along the coast and last time we picked one up we stopped at the oyster farm and got a gross. You should just come out to CA and pick it up![]()

g-man, I can check at the farmers market this weekend. You might have to drive up to Westchester though to pick up.

Never thought of using the wine cellar. What a great idea. What temp do you keep your cellar at? If I can get mine low enough, I'm going to try it.

I have calls out to two purveyors. One being the one that Blue Hill sources from. The other being one further upstate. It is going to take a couple of weeks since, some the pigs just went to slaughter. You still interested?

sure, i reached out to heritage farms and ottomanelli's but both wanted me to pick up a much larger qty then i can store. (or it came to like 80$/lb)

sounds ridiculous
i was up in the finger lakes and picked up 20 lbs worth at 3$/lb (and they trimmed and skinned it for me)
which is what i've been trying to say all along the "local" guys just looking to rip you off unfortunately. A less desirable cut is 13/lb I shudder to think what the more desireable cuts would cost!
