I check frozen lobes of foie gras and coolers of frozen fish all the time. Ham should be A-OK. Just don't pack ice.

g-man, I can check at the farmers market this weekend. You might have to drive up to Westchester though to pick up.

g-man, I can check at the farmers market this weekend. You might have to drive up to Westchester though to pick up.

i've got a cellarpro blower in mine and it's abaout 8 ft x 7
the racks make good places to hang stringed up meats!

so it's at 55 and around 62 humidity

winter time the thing doesn't run and it gets to like 51 and around 58 humidity

sure, i reached out to heritage farms and ottomanelli's but both wanted me to pick up a much larger qty then i can store. (or it came to like 80$/lb)

well on a positive note, they did state that this is less desirable cut, I am just worried at what Blue Hill will charge.
