Peanut sauce for satays

I don’t know if this one is proper but it is one that I’ve used in the past.

Marinade
Process in a blender or food processor until smooth:
½ C canned unsweetened condensed milk
1/3 C minced shallots
2 T brown sugar
2 T soy sauce
1 T minced garlic
1 t ground cumin
1 t ground coriander
Put whatever meat you are going to grill in a shallow dish (cut into strips about 3 x 1 ½ inches)
Toss the meat with the marinade and let stand at room temperature for 1 hour or up to 24 hours in the fridge.

Peanut Sauce
Combine in a medium saucepan:
1 C canned unsweetened coconut milk
½ C creamy peanut butter
4 T firmily packed light brown sugar
1 T fish sauce
1 T soy sauce
1 T canned Thai Massaman curry paste
½ t curry powder
Whisk in thoroughly:
½ C hot water
Simmer, stirring occasionally, over low heat until flavors are well blended, 15 to 20 minutes. Stir in:
2 t fresh lime juice

Keep all of it warm while you grill the meat.
