Darlene, during the summer months oysters breed so they are "milky" and not at their best until cooler months, hence the "r" factor Big Grin.

No problemo, Darlene. Cool With the increase in farm raised oysters, the whole breeding "r" thingie is becoming less of an issue than in the past. The kicker is to buy your shellfish (wild or farm raised) from a great source. They'll only stock oysters when they're "good to go."

I'm reviving this thread because some friends are in town this week and, though not my favorite, we'll likely be tossing some fresh oysters on ice and on the grill. I've called my local fishmonger and he assures me that the oysters are fine.
So yes, we'll have plenty of champagne on hand, but I've heard that a cold, steely sauv blanc goes great with them too.
Opinions and recommendations?

Substitute "gruner veltliner" (a good one please) for "sauv blanc" and see what you think. Even better, serve both blind and see what you think.

Had some at the Quarterdeck in Harbortown on HHI this past Friday evening w/an '05 Sterling SB - a great pairing!

I was on HHI myself over the weekend and saw raw oysters on various menus. Where are the oysters coming from this time of the year? I couldn't even bring myself to ask the waiter about them because the ocean was like bath water earlier in the day.

PS when are we going to organize another offline.
