The best oyster I ever had was on the half shell on my cousin's oyster boat off of Rock Hall in the Chesapeake. I was 12-years-old and I remember it to this day, (it was my first raw). Unfortunately, wine wasn't on the menu that day.

I was lucky enough to grow up feasting on just about every oyster, blue crab, and rockfish dish you can imagine. Close runners up to oysters on the half shell were fritters and stew. I have tried so many recipes since, however it is impossible to replicate what the ladies on my mom's side of the family knew by rote. Of course I was too busy eating to ask them to write things down and now they have all passed. Frown
I know what you mean. My mom died on Sept. 12th of this year and she made the best oyster dressing on Thanksgiving. I had to make it this year, with no recipe. She did not write anything down either, But, she would have been proud. It came out great!

Boy that sounds so good. I do a oyster appetizer in fillo shells to go with bubbly. Great for parties or to treat yourself to a snack.

One of my favorite oyster dishes in the last couple of years was a fried Merliton with fried oysters and oyster tasso hollandaise from Jacques-Imo's in New Orleans. Other than that, I'm all for on the half shell with champagne.

Lorrie- are you going back or staying in LR ?

My in-laws lost their home and ended up relocating to Tampa where my wife and I live.

I am an avid ocean kayak'er...and with the Northern Gulf Islands on my doorstep there are natural oyster beach's everywhere.
Not to mention a guzillion oyster farms...

Raw out-of-the-shell...or warmed up over a fire (which saves your knuckles from schucking).

Alsatian whites, German Reislings, SB, and champagne...are all good matches.
Well, we a 10 year old son with autism, so the services and school system is better here. He receives home therapy here and we have seen some progress since we have been here. My husband and I both were born and raises in New Orleans. He misses home so, I really don't. So many problems at home, and the Mayor... Well, it is slow in Little Rock, but I lived in the suburbs back home so I am used to that. Just miss my home, we built in Dec. 1999. It had all I needed. Now, we are in an apt. that is old and let's say not the best of neighbors. So, that's my plight. Sorry about your in-laws. It's hard to change when you are older. My husband is 19 years my senior, so he is having a hard time. Thanks for asking.

How do you make it? I may try it for the holidays

Saute leeks, add potatoes (already cooked), lemon juice, butter, cream, lots of hot sauce. And then more hot sauce. Take the boat motor to it. But the best part is the fresh oysters that my brother in law gets from Tomales Bay. And we add those in with the liquor. Sometimes we add some cognac or sherry prior to dairy, sometimes not. He likes to top it with creme fraiche....
Sounds good!

I go back monthly for work so I know what you mean about the mayor. Same issues need to be resolved. I do love the city but am glad I don't live there anymore. It is sad though that so many folks are still struggling so hard. I think people are going to forget soon.

Good luck in LR.
