The sausages and Cajun spices can overwhelm a lot of white wines. I like the acidic whites already recommended, but my first choice (after beer) would be a big, fat Viognier or oaky Chardonnay. And there's always Champagne.

Best low country crab boil we had was at The Crab Shack at Chimney Creek outside Savannah on the way to Tybee Island.
one of my favorite "cheap eats" in Red Rock & Green Valley in Vegas is a place called Tides Oyster Bar and they make delicious boils, but their's are a little heavier with cream added as well... i drink Champagne every time Cool but mostly because i start with a dozen Oysters... i like the Viognier & Chard recommendations as well

We always do our own low-country boil when we stay at our condo on HHI; believe it or not it has become our New Years' Eve standard dinner. Last year we paired it w/two '03 Truchard Chardonnay, year before it was two '02 Ramey Hyde Vineyard Chards.
