The sausages and Cajun spices can overwhelm a lot of white wines. I like the acidic whites already recommended, but my first choice (after beer) would be a big, fat Viognier or oaky Chardonnay. And there's always Champagne.

Best low country crab boil we had was at The Crab Shack at Chimney Creek outside Savannah on the way to Tybee Island.
