Spent a rainy saturday making chili all day. Been a while since I've done a big pot of the red stuff. It's amazing how many beers are requried for the process.

Grilled some thick cut pork chops last night with a champagne mustard binder and a bourbon spice rub. A little apple smoke to complete the flavor profile. A keeper.

Some friends recently started doing sous-vide and had us over last nite. The main course was prime beef tenderloin. I’d been a skeptic, but holy shit. They were able to get my wife’s to the unholy doneness level she prefers while the rest of us had perfect medium rare. Finished in cast iron with a fantastic crust texture on the outside while the inside remained where it should be. Wow.
