Sweet corn season is here in Mpls. I grew up in Iowa and moved here in 1988. Just curious how others like to prepare it and or add it to other dishes they make this time of year. I like to shuck the corn and wrap it in foil with butter and salt from my sea salt grinder and throw it on the grill. Reminds me of growing up in Iowa where corn is king.

I'm finally getting used to eating corn again. I detassled for a few years and couldn't stand corn for several years after. I like blanching it then grilling it, then slathering it with browned butter. Oh yeah!
I soak it in water for a while and throw it on the grill. My friend actually peels it back and removes the silt, butters and salts then puts the husk back up and throws on the grill. I love IN. sweet corn!
If it's really, really fresh, boil for 2-3 minutes and enjoy! No butter, S&P, etc. I do like corn grilled as well, but usually save that preparation for only so-so quality corn.
I tried this for the first time last week and the Mrs. loved it so much it's now on the rotation. I got the idea from a recent Bobby Flay grilling episode.

I grill the corn in the husks after removing the silk and soaking in water for a little while.

next, cut the kernels off the cobb and add to a hot skillet with melted butter. Season with salt, pepper and ancho chili powder and sautee for about three or four minutes.

transfer into bowl and top with shredded manchego cheese. DELICIOUS
we have sweet corn since july 1
i go to Andersons farm and get fresh picked corn that morning all summer!

one way i like it is;
fresh lime juice
evoo
chili powder
crushed red pepper
clean corn, roll in mix then to the grill
bast it
when finished roll in butter

but i do miss that silver queen and crabs!
