I label everything that comes into my cellar and scan anything that heads out. If I am giving a bottle away as a gift I just turn off the option to show price/value on the label and print a new one to cover up the old one.

I do for every bottle. I typically don't scan it when I drink a bottle. I just type in the barcode number in the CT/Grapestories search box and the specific bottle pops up ready to remove. The scanner is a huge boon if you are rearranging things in the cellar.

By the way, I've tried several different kinds of labels. Removable are great but I have noticed that when they've been on a bottle for a long time (8+ years?? - when did you start CT, Eric?) the adhesive is just barely hanging on. The white, nonremovable are tricky to remove cleanly. Best when the bottle is at cellar temp and if the label is oriented vertically on the bottle. Clear labels can still be read by the scanner and usually come off cleanly at cellartemp. BTW, if you refrigerate the bottle or let it come to room temp, both types of labels are tough to remove.
