My husband (and me to a lesser extent) got into collecting wine after a great trip to Napa Valley a few years ago. We've been randomly adding wine racks in the basement and buying a mix of favourites, recommendations etc. Right now I'd say we have about 150 bottle in random wine racks and another 150 in 2 of those smaller wine cooler fridges. We have no tracking system/logging/organisation - frankly it's all a bit of a mess.
Some of the wine we've now had for 3 or more years, I figured as a birthday present for my husband I would attempt to organise it all and make some lists.
I've used the search function on WS and then added the bottles to "my personal wine list". My big fear is that without any system/organisationwe'll forget what we have and miss some bottle when they're at their peak.

As I've gone through the list we have quite a few bottles with reviews stating things like "best after 2004" or "best after 2005" or "drink now". My husband seems to have some kind of emotional attachment to some of these wines and is saying that they'll be fine for a few more years.
How strictly should we listen to the recommendations about when to drink? For the last year we've been buying multiples of wines that we like so in the future we'll be able to try them at different times and make an informed decision. But right now many of the wines with "drink now" recommendations are single bottles.
