I'd like to do a solid Christmas menu wine/dinner pairing, and tired to narrow the selection from what I have available a bit.
I would respectfully like to ask if you could do (1) a sanity check on the pairing and whether I'm missing a good idea and (2) help select a good wine.
So, for Christmas, my companion and I have ordered a menu and we are now looking to combine some drinks with the courses of the menu.
We have a fairly extensive wine cellar, listed below, and would like to pick from there, if there are good suitable options.
The menu is as follows:
Appetizers:
- Octopus Tokay Style
- Duck breast Smoked
- Gouchère époise (baked savory choux pastry made of choux dough mixed with cheese, basically Cheese puffs)
First Course:
- Crab / Cauliflower / Green Apple / Eel
Main Course:
- Turkey / Truffle / Mushroom / Fine Champagne (sauce made with, confusingly, cognac)
Dessert:
- some form of Kerstbûche or Yule log or some pastries in that sort: basically a sweet roulade and we'll pick a or more (chocolate) focused one(s). ([https://en.wikipedia.org/wiki/Yule_log_(cake)](https://en.wikipedia.org/wiki/Yule_log_(cake)))
We were thinking of making a pairing as follows: a champagne for the appetizers and first course, a good red Burgundy for the turkey and an accessible dessert wine for the dessert.
More narrowed down: I was thinking a Blanc de Blanc for the Appetizers and First Course. Blanc de Blanc because it sounds like that would go nicely with the crab though perhaps less so with the appetizers? If you agree, of the blanc de blancs I have, I think the Lanson Extra Age Blanc de Blanc might be the highest quality one?
If you also agree with a Burgundy for with the turkey. I'd like to do ones I have that will benefit less from more aging. I do happen to have two Domaine G. Roumier Chambolle-Musigny 1er Cru 'Les Cras' 2005 and two Domaine Sylvain Cathiard Nuits-Saint-Georges 1er Cru 'Aux Murgers' 2006 so would make sense to pick of those perhaps. What do you think? What would you pick?
Christmas desserts are always nice but perhaps it pairs best with a more casual dessert wine. The Cream Sherry Bodegas Argueso might be a good but accessible pairing, not too delicate for a heavier sweet treat.
