There is an Italian shop not too far from where I live.  Everything Italian.  Not Italian-American.  The real stuff from where Nona came from.  The couple who opened it are from Milan.

Anyway, I was there to pick up some olive oil.  I noticed a bottle of white balsamic vinegar and was curious.  So I threw it in the basket.  I got home and used the white balsamic to make a vinaigrette.  Wow.  Delicious .  Balanced.  Slight tang with a touch of sweetness.  

How about you cooks out there?  Any recent discoveries?

Fresh fennel pollen. I also found it in an Italian shop (the owner actually collects it from wild fennel). It's amazing and fragrant stuff. I used it in porchetta instead of fennel seeds.

Currently a big fan of hatch Chile powder. Currently have a medium and hot version in my spice cabinet. Try and find the Guzman brand in Santa Fe.
