I have seen that done...and it is extremely tacky. I'm just talking about changing the color of the face. One of my first watches was a stainless steel Rolex Air King with a silver face. Changed it to a Salmon color face and looks completely different.

So, your guy will remove four hands, remove all the 18K gold markers and numbers, acid etch the enamel, reapply new enamel color, fire cure enamel, put back all the markings of the watch, illegally add all the trademarked Rolex logos in all colors and certificates, install all four hands back then recalibrate the chronometer to COSC tested standards, install the crystal and bezel to watertight certified standards all while decreasing the value of the watch by 90%+.
I'm confident said person works to the same standards as the Rolex standards are for inspections and certifications as well.

Why customize when you can buy a genuine Rolex dial in a different color/marker/numeral configuration to your liking? Then you'll have the option of swapping back and forth, and you'll be adding to the value rather than reducing value (Rolex collectors/buyers detest customized pieces).

Remove the hands...no need to remove the markers. No need to remove the Rolex logos or trademarks. Dials / faces come off of other watches and can be interchanged. Never said they increase / decrease value (probably decrease) but I'm not looking to resell any of my watches. I know authorized Rolex dealers do not do this.

Fusion...it is a genuine Rolex...purchased new from an authorized dealer. Just wanted a different face/ dial.

I may be wrong but I saw a photo album with dials in place of pictures. You could choose a dial if it fit your watch. Makes better sense? Is this a very uncommon practice?

There's nothing wrong with buying a different, genuine Rolex dial that is compatible with your genuine Rolex timepiece. In particular, folks who own the Daytona models can have multiple dials (e.g. both the black and white dials for the iconic stainless steel Daytona model 16520 and 116520).
I have a yellow gold Daytona 116528 that rolled out of the Rolex factory with a champagne dial with diamond markers (it's even noted as such on the Rolex guarantee card). For less than $500, I bought a genuine champagne dial without diamonds as an option to swap out the diamond marker dial. Have yet to change it, but if I ever decide to sell the timepiece, I'll certainly make sure to include pics of it "wearing" both dials.

Sold my JLC Master Control yesterday. 
Since I decided to jump off the corporate merry go round three years ago I just don't wear this style of watch as much as I once did. JLC makes a damn fine watch IMO and the watch deserves more wrist time.
My Glashutte has been my watch of choice when I still need something more corporate.

Yes...that is exactly what I did...really prefer the salmon color dial. Champagne on a Daytona sounds beautiful.
Just changed the brown leather strap on my IWC Portofino Chronograph with a black dial to an IWC navy blue strap...looks fantastic. Like a brand new watch.

Completely agree. A strap change can give any watch a very different personality.
I change out straps often and changed straps on three different watches just yesterday.
I was in Dallas for a few days and hot enough to force me to switch out a couple of watches to NATO and Zulu straps for summer.

Assuming it has the Pesuex 7001 movement it would be around $350 from people I trust for an overall cleaning and tuneup.

I have never really been much of a boutique brand guy in the past with few exceptions. That said, there are more and more micro-brands available than ever before.
I bought the Magrette Moana Pacific Professional Black dive watch out of New Zealand. They made 500 of these automatic 500 meter watches.
Not expensive so not too much of a risk if it doesn't find its way into the rotation.

Curious...how many watches do you own (you being anyone who replies) and how many do you wear? I have three watches that I rotate weekly. Want to get another...but afraid I may not end up wearing one I currently use.

That's a pretty big number. I love watches...just worry that a few would fall out of favor if I have too many. Sounds as though you wear the majority of them though.

I find I wear a watch about 60% of the time at the moment. I used to wear one 100% of the time but my only shower-safe watches I don't really daily wear and I've just gotten out of the habit of putting on after a morning shower. Mostly wear the Mille Miglia with the JLC and Omega also in usual rotation. My wife daily wears my Panerai. Most of the watches I have get little wrist time, the Zenith, IWC & Tag Chrono were my dad's, the Tag F1 was my childhood watch which I will give to one of my boys, the Mille Miglia was presented to me after leaving a board position, the Heuer was my first nice watch and the JLC my wife gave to me on the day we were married. So the only one I could ever see selling is the Omega. I love watches but I only have three left to buy, a Franck Muller Casablanca for my wife who for some reason loves them (they are very comfortable with the curved case), an FP Journe Octa Reserve de Marche as a statement dress watch for me (but I need to make a lot more money then I currently do) and a PP 5164 (Aquanaut Travel Time) which I would probably rarely take off and wear 90% of the time.

Really too many and no way to justify. It just happens over time. I have had more before selling several off. I'm thinking I will give a couple to each son-in-law then sell a few.
There are seasons in life and things also seem to have seasons with me and my wife. I sold 85% of my wine off over 2 years ago. The only thing we collect that has never had a season is our art. While our kids have 50+ pieces of our art in their homes, I just don't see us selling our art anytime in the near future.

I think you can have too many. I don't fret about a $1500 or less watch not getting much wrist time, but it does bother me when a JLC, Glashutte Original, Rolex, Omega Sea or Speedy et al not getting their fair due!
I have well over 50 straps and that always helps freshen up a watch. I enjoy NATO and Zulu straps in the summer months with fun color combinations.
