Better than good: great.

Actually, better than great: great AND really easy.

Mix mayonnaise (home-made or best commercial product you can find) with dried dill, honey (about 10 to 1 mayo to honey), bit of fresh garlic, salt and pepper to taste. Put on grilled or baked salmon.

Here's the story of that little recipe: four guys were out fishing, weather got bad, they had to beach their boat, built a fire to cook some of the salmon they had caught, and pooled their resources to see if they could make up some side dishes. The recipe above was one result. Later, one of the guys entered it into a magazine recipe contest, and won first prize: 15-foot boat, motor, and trailer.

True story. (I worked with the guy for a few years.)

We've used something similar with good results.
Ax the honey (I'm not into sweet sauces), add some sour cream, and throw in a few capers with the above recipe. Presto - a quick easy dressing for grilled salmon, and a good match for a lighter Oregon Pinot Noir, or a Chablis, or a Chinon, or a ...
