Although I understand the true definition of the word "austere", I am puzzled when I see it used in a tasting note. Would anyone like to share their interpretation of this descriptor?

I use it when there is not much flavor, especially but not necessarily if it is in contrast with a generous nose.

A polite way to say there is not a good fruit flavor profile.
When I use "austere" as a wine descriptor, it's usually when describing and old-world wine (think France) to a wine newbie. Understated as opposed to fruit forward.

"austere" -- when "rustic" goes wrong....
If you're using it as a positive description, you mean Muscadet from the Loire or possibly a white from north Italy.
If you're using it as a negative, you probably mean the same thing.
