As I sit here eating some hot pastrami, I'm struck by the fact that I have no idea what wines pair well with it. For that matter, what wine pairs with most deli meats (corned beef, beef tongue, chopped liver, etc.). I know all about how beers match up. I even know how to pair cured meats like salami with wine. With the other deli meats however, I am lost when it comes to wine pairing. Anybody out there have some tried and true recommendations.
