Chilean Seabass & Wines

As a Chilean and working in wines...I would like some advice about seabass, a fish that we have in our coast in the pacific ocean but I know is very popular in the U.S. What type of wines are recommended to have with??

I think Chile should market more the gastronomy thanks to salmon, seabass, and so other great dishes we have, but we have not be able to push over the market.

I quit buying seabass when it became ridiculously expensive. I follow the neoclassical economic approach of substitute goods when it comes to most foods. Also, I remembered hearing that seabass are on the endangered species list.

Just out of curiosity....how much cost the seabass?? In chile, must be less than 10 dollars per kilo.

Fillets are normally about $14 per pound.

I used to love Chilean sea bass. In fact, I still do, but it's rare to find it here in a fishmonger's today.

Here's a link to a short Tom Brokaw interview that explains how it became popular so quickly. According to the article, as the price went up, illegal fishing depleted stocks; it's not endangered, but has clearly been overfished. Too bad.

At $10 per kg that comes out to about $4.54 per pound which would be a great price in the States. I can remember when they were around $7 per pound but those were frozen and not fresh. Last weekend I saw them for $19 per pound!!

Two weeks ago Stefania really really wanted Sea Bass. Whole Foods no longer carries it because it has been overfished and it's not on their environmentaly friendly list. I paid $23 a pound at a fish monger for it.
