We're going on a picnic and keeping it simple. Riesling spatlese is going to be the wine. I'm wondering whether there are cheeses that make nice pairings with spatlese?

No great pairings come to mind.
The first two things I thought of were a really sharp cheddar and a (perhaps more mild) Stilton.
Others may be able to give better suggestions. (But I think these suggestions are fairly solid.)

I would rather select a type of cheese that I would enjoy eating versus finding the best pairing to a wine. In the same token, I would select wine that I would enjoy drinking as well.
For me, I like just about any triple cream cheese, and I happen to like it with a young spatlese.

With a Spatlese, I prefer fruit or fruit-based desserts. Cheese is far down on my list of pairings for Spatlese, but if I had to pick one, it'd probably be goat cheese.
+1 on the goat cheese if you have to have cheese...a fresh would work, could serve on a toasted type of thin sliced french bread, or the like, and could even top it with a fruit relish/chutney/jam type topping (check out your local cheese shop if you have one or a gourmet/specialty store... a young La Tur (goat/sheep/cow mix) would even work.quote:Originally posted by Board-O:

I will try the sharp cheddar, the stilton, and the goat cheese, and report back.
