I recommend La Colombe (554 Duluth East corner St-Hubert, 514 849-8844) Some may find it a little meat-centric but I'm a dedicated carnivore so that was not a problem. Desserts tend to be very good (the chef's a dessert and chocolate expert). Good stemware, including flutes, and red wine-friendly food. The foie gras was fantastic and a HUGE piece of it, just lightly and perfectly seared for about $22.
Another restaurant I highly recommend that is BYOB but may not have foie gras on a given night, is Les Infideles. My wife and I had a fantastic meal there last fall and it was very reasonably priced.
