I just bought some nice Auslese, and while it is not quite ready yet, I am trying to figure out what to do with it - not much of a dessert person - any cheese suggestions?

I'm sure it will go well with some cheeses, but it's not a pairing with which I have much experience. If you avoid most desserts, it's great with fruit. If I had to pick a cheese, I'd go with something with some tang to it, maybe a goat cheese.
