We are guest at a dinner featuring this dish and I am really confused as to what wine to offer as a pairing. Char screams pinot, but tequila lime?.....a totally different direction.
I've only had Arctic Char that I've caught myself on a wilderness fishing trip. We fried it stream-side. Without the Tequila lime sauce, most whites or a Gamay or Pinot Noir would be fine. With that sauce, if wine is a must, I'd go for a Riesling or Gewurtztraminer with some sweetness.
