The logs need to stay wet over many months. The humidity and resulting mold would ruin the wine labels. Best done outdoors.
My son-in-law and his father have been growing shiitake in logs at the father's farm in coastal Oregon.
Pretty much ideal conditions, and highly successful. I'm thinking of bringing on of the logs to Seattle to give it a try. Morels sure sound good.

i forgot about a bag of mulch i bought last year that sat under my fig tree

because of the crappy weather my fig tree had to be pruned and the soil repreped, i opened the bag of mulch thinking might as well use it.

to my surprise there was a 5 lb chunk of oyster mushrooms growing inside the mulch bag.

I was half tempted to wash and eat it until i saw the thousands of ants and various other bugs crawling around it.
