JMAX, don't overthink this.  Sangio, preferably young and robust will work.  I agree with Chianti primarily.  Non riserva.  Not too old.   Perhaps a Barbera, just to be contrary.  I've found that there are no guaranteed pairings.  Ever.  Sometimes there is magic. Sometimes, it's just food and wine.  Serve a crusty loaf of bread and a crisp salad and enjoy. As long as the wine doesn't get in the way, it's a win.
