although I'm in Alabama, my thoughts on btg programs might still be relevant. I'm a wine buyer for a restaurant in Alabama, and we don't have the volume of big city California restaurants, but I find that my btg selections move correctly at 20 glass pours. I change my wine list 3 times a week, not because i want to, but because I have to..
I only buy the best wines, and use volume to lower the price... for a few examples.... I've done the following wines in the last two weeks...all 6 ounce pours...
2004 Donnhoff Norheimer Hirschcheck Riesling Auslese $13Glass $52Bottle 95 points WA
2004 Ch Leoville Poyferre 2003 98 WA

I think number of wines btg is less of a concern when the value of the wines is very high..and allocation is low so the selections change constantly... give me a holler if you are ever in LA (lower Alabama)... I'll be happy to taste you through my BTG and see if it stacks up to the 100BTG'ers
