I just had a discussion with a wine merchant in a distant city re a couple of bottles I'd bought from him that were off. He insisted that it was virtually impossible for two bottles from an order of two cases to be off because "there is almost no cork taint anymore". This was news to me, as I thought I remembered reading years ago that about 5% of bottles under cork were corked or otherwise off due to flaws in corks. But perhaps I'm behind the technology. What's the latest on this?
