1 oz. Honey Pineapple syrup*
2 oz. Mezcal
1 oz. Pineapple juice
1/2 oz. fresh lime juice
1 dash bitters
1 dash chipoltle hot sauce

*(2 cups honey, 1 cup hot water mixed into a pineapple cubed up and muddled with 50 pink peppercorns - let sit for a day then strain)

Great cocktail. This and their version of the Manhattan are my favorites cocktails at Employees Only.

Btw noticed you used hot sauce & bitters instead of Bitterman's Hellfire bitters. Does it taste the same, or do you prefer it this way?

I don't see hellfire bitters up here. I also like the extra smoke from the Chipoltle. The recipe I use above also has an extra .25oz of pineapple more than the original.

Pineapple, Mezcal and pink peppercorns are a match made in heaven.

Other great summer cocktail is a Rye Guava Smash

4-6 mint leaves
Healthy sprinkle of raw/demera sugar
Large lime wedge

Muddle the above together

2 oz Rye
1.5oz Guava juice

And you can always do up a big thing of Grog but you will get messy...
2 parts Navy strength Rum
2 parts Dark rum
1 part Pineapple Juice
1 part Orange Juice
1 part Guava Juice
1 part Lime Juice
