Here are a few fun cocktails:

Kingston Colada
1.5 oz coconut water
1.5 oz aged amber rum
1.5 oz pineapple juice
3 dashes Angostura bitters

Add all and stir in an iced filled Old Fashioned glass

Goombay Smash
1 oz dark rum like Gosling's
1 oz coconut rum
0.5 oz apricot brandy
2 oz pineapple juice
2 oz OJ

Shake and strain into a ice filled Collins glass

But if you really want fun, you can always make a Woo-Woo aka the panty remover

4 parts cranberry juice
2 parts vodka
1 part peach schnapps

You can either shake and strain into a cocktail glass or make it a long drink with ice in a Collins glass.
