I will still sample many wines before they reach maturity as I enjoy the lush fruit and bold flavors of young wine. That's why I buy many bottles of wines like 2007 Sassicaia which is drinking surprisingly well for a wine that historically needs 10-15 years. FYI read the CT notes on this wine.
I also enjoyed a 2002 Comtes that night and it was spectacular
