Reply to "How To Cook A Club Roast (NY Loin)"

This was done at 225 and pulled at 128. I rubbed it with truffle mustard, had it cranked to 500 and then set at 225 (so the oven was off for 30 minutes or so as it lost temp then the rest of the time at 225).
