From your cellar I’d do whatever is your favorite Blanc de Blancs, the Dublere Corton-Charlemagne and the Briailles Corton or Mortet CdV.  If you want something “stronger” (or a safer bet) for the red, maybe the Vaudieu CdP.  Apart from your Champagnes, I’m not super familiar with the other wines I’m recommending except I’ve had Vadieu once and I think Chadon de Briailles once. But a quick glance online and it all seems high quality and those are the regions and ages I would aim for, so...
