Looks like a great menu and a nice cellar. My experience is that there is no single, absolute, perfect wine for a dish. You have a good selection of Champagne for the lobster salad. I would imagine any of the white Burgundy will work nicely with the scallops and the red Burgundies and the Jamet with the sweetbreads. I think it's really down to a preference. I'm a big fan of Pierre Peters especially with some age to them. Enjoy!
