There are 8 culinary cuisines in China, not 7. I have had Szechuan, Hunan and Cantonese. I have not had the others, at least not to my knowledge. Why do you ask?
7 ,jiangsu is nonsense and basically is shanghainese style cuisine
but with the diversity of chinese cuisine, you can pretty much find similar styles through out the world reflected in one of the 7 chinese cuisines.
