I pretty much felt it would come down to the Heidsieck and the Taittinger, with the others not being ready.
So, I am pretty sure that I am going to bring both and open the Heidsieck Friday night and the Taittinger at Morimoto on Saturday night. Or maybe something else for Friday and both of them on Saturday. I also think a .375 of Yquem might be in order for all of the foie gras dishes. Such a dilemma!
