Why do you say that? We've had similar discussions in the past about white rhones, but what about red CdP? At any rate, based on your comment, I will put a bottle of 2001 Beaucastel rouge, standing up for a few days, back into the cellar. Hoping to see you soon. Cheers!
Java, it's my preference to either enjoy CdP with fresh, relatively vibrant fruit or after giving it full time to develop the mature secondaries. The middle ground with the secondary characteristics coming up and the fruit starting to fade a bit isn't what I'm after (also, I think the alcohol shows itself more in this stage). So if I don't drink it young, I set these bottles aside and take my chances.
