Only because I was anticipating this wine would need some time in the bottle to properly flesh out. I'd be happy to open one sooner if you insist. Big Grin

If you do open it, I'd open it soon. Not that the SQN's shut down hard or anything, they are new world stuff.

Last night it was pretty smokin without a decant over a couple of hours in the glass.

It's summer so lighter foods and lighter wines. Tonight: gravlox on a bed of Boston bib lettuce on a toasted baguette with a spread made up of goat's cheese, heavy cream, lemon juice, lemon zest S&P, topped with capers and fine diced red onion. Vino a Canevel Prosecco. A client of mine transported the gravlox from Denmark and gave me 3lbs of the stuff. Quite yummy and a great pairing with Prosecco.

Will be eating smoked salmon all weekend.

ML:

How was the '86 Latour? Anything I've tried has been still closed over the last 1-2 years, but maybe they're beginning to spread their wings.
The '92 should have been glorious. Have you posted TN's? Looking forward to your comments.

Dok, your assertation is correct. The Dominus was the wine of the night. Fresh and vibrant. It actually had more bricking than the Latour which, by the way, is still a baby. It was not closed down and actually started to 'spread its wings' after only a couple of hours. My last glass was the best. Lead pencil and fruit. I will try to post a note. My brain is a little foggy right now and I've really taxed my liver over the past couple of days. No more wine for me...'till Monday.

Don't be in a rush to drink it. I think it's still improving. I posted a few impressions of it in the tasting notes forum.

Thanks for the notes.
